Creamy tomato risotto

A simple and quick recipe of a delicious creamy tomato risotto that the whole family will enjoy.

Serves 4

Ingredients

  • 200g risotto rice
  • 1.2 litres water
  • 3 medium-sized courgettes grated
  • 8 tomatoes, skinned and seeded
  • 200g mascarpone cheese
  • A few basil leaves, finely chopped

Method

1.  Cook the risotto in the boiling water until soft. Drain. Return to the pan and stir in the courgette, continuing to heat gently for a minute or two.

2.  Meanwhile, finely chop the tomato and stir into the rice along with the mascarpone and basil. Keep on the heat for a few moments so the mascarpone has time to warm and serve.
