Oven roasted sausages and vegetables

A delicious, budget recipe of oven roasted sausages and vegetables that is perfect for all the family. This recipe is infinitely adaptable – just use whatever vegetables you have to hand.


Serves 4

  • 500g new potatoes
  • 2 cloves of garlic
  • 2tbsp olive oil
  • 250g cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 1 red onion, roughly chopped
  • 1 courgette, roughly chopped
  • 4 large Cumberland sausages


1. Preheat the oven to 200°C/gas mark 6.

2. Put the new potatoes, halved if large, in a roasting tin, add garlic and olive oil and toss to coat. Roast for 15 minutes.

3. Add the rest of the vegetables and cook for 15 minutes.

4. Add sausages to the tin, toss again and cook for a further 15 minutes.

5. Add the balsamic vinegar and cook for a further 8-10 minutes until the vegetables are tender.
