Sweet and savoury pancake recipes

Quick and easy-to-make pancake recipes from family food blogger Rachel Brady.

We eat pancakes a lot. Most often in the American style, all fluffy and stacked high with butter, maple syrup and bacon or blueberries; it’s possibly my favourite meal ever. But growing up we ate these more traditional pancakes, and they are just as good. Serve simply with butter, a little orange or lemon squeezed over and a sprinkle of sugar they are perfect.

If you fancy a change, here I suggest two new ways: one savoury and one sweet.

Basic pancake recipe

Makes: 10-12

  • 2 x ½ pint glasses (1 pint) of plain flour
  • 2 x ½ pint glasses (1 pint) of milk
  • 2 x eggs
  • Pinch salt
  • Butter, for frying

This recipe is one to remember. No weighing! Use a roughly ½ pint glass and away you go! Simply pop it all in a big jug or bowl and whisk it up into a batter. Little lumps are nothing to worry about.

Sweet and savoury pancake recipes

I start here with the sweet ones, as my idea is that you make the caramel sauce in advance (it’s SO easy), then make a batch of pancakes, enjoy 6-8 this way for dessert after dinner, and then put four aside for the savoury recipe, below, in the freezer or in the fridge for later on in the week.

Caramel sauce

Makes: a jam jar size full

  • 4 tablespoons of butter
  • 4 tablespoons of brown sugar
  • 3 tablespoons of double cream OR crème fraiche
  • Pinch salt

1. In a heavy saucepan, over a medium heat, pop sugar and butter in and wait till they melt. The sugar will not completely dissolve yet, so don’t worry.

2. Add the cream – at this point it all comes together and the granules disappear like magic.

3. Now a pinch of salt, stir and set aside. Store in a jar, in the fridge, for a few days.

Pancakes with banana and caramel sauce

  • Pancakes
  • Caramel sauce
  • Banana, sliced
  • Vanilla ice cream

1. Using a warm or cold pancake, place some sliced bananas in a corner (imagine the pancake is a circle with quarters). Now drizzle them with caramel.

2. Fold in half, on top of the bananas, then fold again downwards to cover the pancake once more – see the picture.

3. Top with ice cream and more caramel.

Savoury pancakes with bacon, mushrooms and leeks

Makes: enough for 4

  • 4 pancakes
  • 1 teaspoon butter
  • 100g pancetta or bacon lardons
  • 1 leek, sliced
  • 125g mushrooms, sliced
  • 1 tablespoon butter (more)
  • 3 tablespoons plain flour
  • ½ pint milk
  • 2 teaspoons mustard (optional)
  • 150g cheddar cheese, grated
  • Pepper

1. Melt a little butter in a saucepan. Add pancetta / bacon and leeks. Fry for 10 minutes, until soft.

2. Add mushrooms and soften for a few more minutes.

3. Now some more butter in the same mixture – and once it’s melted add the flour. Stir to make a kind of roux but with the mixture also in. Add milk and stir well, until thickened.

4. Tip in half the cheese. Add mustard and pepper.

5. Fill each pancake with a quarter of the mixture, as though you are making a fajita or burrito – a thick strip of filling in the middle is what you want. Roll up and pop in baking dish. Repeat four times. Top with rest of cheese.

6. Bake at 190°C/gas mark 5 for 20 minutes.
